Just a note on that docs section, it references --ceph-version primarily but I'd recommend using --image, in this case with the image being quay.io/ceph/ceph:v18.2.2. I had meant to update that. The --ceph-version flag has occasionally not worked since the move from docker to quay for the ceph images, whereas --image is much more consistent.
